Pecan Crusted Tilapia

Pecan Crusted Tilapia

1/2 c panko breadcrumbs
3 T finely chopped pecans
3 T  shredded or grated Parmesan cheese
1/2 t salt
1/4 t garlic powder
1/4 t black pepper
1/2 c milk
1/4 t cayenne pepper
4 T flour
1 T vegetable oil
2t butter
4 tilapia fillets
Lemon and Parsley

Mix first 6 ingredients.  Place milk and cayenne in shallow dish, flour in a dish and bread crumbs in a third dish. Rinse tilapia and dry on paper towels. Dredge in flour, dip in milk, coat with breadcrumbs.

Heat half the oil and half the butter in a nonstick skillet. Cook 2 fillets 3 minutes on each side. Drain on paper towels and place in 200 degree oven to keep warm while you cook the other fillets.  Serve with a lemon wedge and sprinkle with chopped parsley.

Sorry no photo! They were so good we ate them before I could take a photo! But they looked beautifully crispy and brownies!

Who Doesn't Love Brownies?

Just saw this post on FB... A friend re-posting a Pampered Chef recipe for Brownie mix... I am going to make up a few batches to keep on hand... Fast, east, and you already have the ingredients on hand! Keep in Mason jars or Ziplock bags until ready to bake. Will let you know how they turn out, but how can you go wrong with brownies? Since I am a chocoholic, I will add chocolate chips or chopped chocolate or maybe I will add some M&Ms since I just won over 3000 of them in a contests to guess how many are in the jar. How about adding 2 T strong coffee... Will have to try that! Adding walnuts or pecans is always a good bet for brownies.

1 c sugar
1/2 c flour
1/3 c cocoa
1/4 t salt
1/4 t baking powder

To bake add:
2 eggs
1/2 c veg oil
1 t vanilla

Bake: 350 20-25 min in 8x8 or 9x9 pan

It is Spring in North Texas! A favorite time of year... Except for all the pollen!
We plan an outing on Wednesday afternoon to Dallas Blooms at the Arboretum, a picnic and one last birthday celebration! This has been a celebratory birthday year with many birthday feasts for both of us!

Jon suggested we need a blog to share recipes etc, so here goes. There is a learning curve here so
don't expect much in the beginning! I will figure it all out as I go!

I invite you to share favorite recipes that you have TRIED and LOVE! This one is a new favorite! It came from Jon's friend Sarah. Low fat, easy and delicious. Control the heat with the salsa you choose.

Crockpot Mexican Chicken    (I don't know Sarah's name for it)
Chicken breasts
Jar of salsa (or homemade)
Packet of taco seasoning

Place all in crock pot and cook all day on low.
Shred with a fork.
Great for chicken tacos, fajitas, enchiladas, freezes well. Thanks, Sarah!
