Pecan Crusted Tilapia

Pecan Crusted Tilapia

1/2 c panko breadcrumbs
3 T finely chopped pecans
3 T  shredded or grated Parmesan cheese
1/2 t salt
1/4 t garlic powder
1/4 t black pepper
1/2 c milk
1/4 t cayenne pepper
4 T flour
1 T vegetable oil
2t butter
4 tilapia fillets
Lemon and Parsley

Mix first 6 ingredients.  Place milk and cayenne in shallow dish, flour in a dish and bread crumbs in a third dish. Rinse tilapia and dry on paper towels. Dredge in flour, dip in milk, coat with breadcrumbs.

Heat half the oil and half the butter in a nonstick skillet. Cook 2 fillets 3 minutes on each side. Drain on paper towels and place in 200 degree oven to keep warm while you cook the other fillets.  Serve with a lemon wedge and sprinkle with chopped parsley.

Sorry no photo! They were so good we ate them before I could take a photo! But they looked beautifully crispy and brownies!
